hicken stir fry Ingredients 1 pound boneless skinless chicken breast cut into 1 inch cubes salt & pepper to taste 2 tbsp olive oil devided 2 cups broccoli florets 1/2 yellow bell pepper cut into 1 inch strips 1/2 red bell pepper cut into 1 inch strips 1/2 cup baby carrots 2 tsp minced ginger 2 garlic gloves minced Stir fry sauce 1 tbsp corn starch 2 tbsp cold water 1/4 cup low sodium chicken broth 3 tbsp low sodium soy sauce 1/4 cup honey 1 tbsp toasted sesame oil 1/2 tsp crushed red pepper flakes Instructions 1. Stir Fry Sauce: in medium size bowel wisk together corn starch and water. Add remaining items (chicken broth, honey, sesame oil,soy sauce, & red pepper flakes), set aside 2. Add 1 tbsp olive oil to skillet or wok, heat medium high heat 3. Add chicken in batches, season with salt & pepper. Cook 3-5 minutes until cooked through, remove the chicken from pan 4. Reduce heat and add remaining oil 5. Add broccoli, bell peppers, and carrots. Stir occasionally until crisp tender. Add ginger and garlic and cook an additional minute. 6. add chicken back into the pan/wok and combine. 7. Wisk stir fry sauce and pour over chicken and vegetables stir gently to combine 8. Bring to boil stiring occasionally, let boil 1 minute 9. Serve with rice or chow mein.
